Thick Potato Soup

My husband was down with a bad head cold and did not want to eat. Came up with this recipe because he loves thick stews or soups and potatoes and corn are his only vegetables. The carrots added some color for interest and nutrition.

My husband was down with a bad head cold and did not want to eat. Came up with this recipe because he loves thick stews or soups and potatoes and corn are his only vegetables. The carrots added some color for interest and nutrition.
Steps

Peel, pair and boil potatoes and carrots

Once desired tenderness is achieved, drain and remove carrot pieces and set aside. Mash potatoes slightly and set aside.

Heat milk in a small saucepan to just before boiling. Pour over potatoes and gently stir.

Melt the stick of butter. Add flour, cayenne pepper, salt and pepper. Mix well. Add can of corn, carrots and onion. Cook for two minutes.

Pour butter mixture over potatoes and milk. Mix gently. Continue to cook over low heat for 10 minutes so that all flavors can merge together.
