Mike's EZ Diablo Scorpion Jam

You can serve this easy, spicy, sweet strawberry jam on just about anything. It even makes a great grilled baby back rib sauce.

We mostly spread it on warm biscuits with melted butter and toasted bagels with cream cheese to tame her heat down a bit. Or, my personal favorite - Mike's, "Peanut Butter Jelly With A Baseball Bat!" samiches.

This sauce also makes an awesome Jalapeño Popper or Crab Rangoon dip. Just add additional fresh strawberries to turn it into more of a sauce than a jam, if desired.

  1. Scorpion Strawberry Jam [yields 2 15 oz mason jars + slight reserves]
  2. 218 oz Jars Quality Strawberry Jam [this will save you time - i use smuckers preserves]
  3. 3 largeTrinadad Scorpion Peppers [seeds left in]
  4. 3 largeGhost Chilies [seeds left in]
  5. 3Extra Large Jalapeños [seeds pulled due to high seed count]
  6. 1/2 tspRed Pepper Flakes
  7. 1 tbspGreen Bell Peppers [packed tight and high - seeds/membranes removed]
  8. 1 tbspWhite Onions [packed tight and high]
  9. Kitchen Equipment
  10. 1Pair Plastic Gloves [required]
  11. 215 oz Mason Jars
  12. 1 mediumPot
  13. 1Blender

  15. Fresh Strawberries

Steps

  1. 1

    ● Chop veggies [while wearing your gloves!] and place in blender with jelly. ● Don't over blend. You'll want some chunks. ● Place jelly in pot and simmer for 10 minutes on medium. ● Pour hot jelly into 2 large - clean Mason Jars and seal them tightly. ● Refrigerate until chilled and firmed.

    ● Serve on bagels with cream cheese, peanut butter or, fluffy biscuits with butter. I personally reccomend peanut butter. It's a fantastic medium! ● Also, have chilled whole milk or any cream based popsicle at the ready to cool off temperamental mouths. I hope you enjoy this jam - ya little devils!
