  1. 3eggs
  2. 1 cupsoymilk (or milk of your choice)
  3. 1/2 cupbaking mix (gluten-free/regular)
  4. 1/2 tspsalt
  5. 2 cupmushrooms, sliced
  6. 2 cupshredded cheddar cheese

    Heat oven to 350°F.

  2. 2

    Place mushrooms in bottom of greased baking dish.

  3. 3

    In a bowl, mix eggs, milk, baking mix, & salt. Pour over mushrooms. Top with cheese.

  4. 4

    Bake for 45-55 minutes, or until egg mixture is set.
