3eggs
1 cupsoymilk (or milk of your choice)
1/2 cupbaking mix (gluten-free/regular)
1/2 tspsalt
2 cupmushrooms, sliced
2 cupshredded cheddar cheese

Heat oven to 350°F.

Place mushrooms in bottom of greased baking dish.

In a bowl, mix eggs, milk, baking mix, & salt. Pour over mushrooms. Top with cheese.

Bake for 45-55 minutes, or until egg mixture is set.
