Ingredients

4 servings
  1. 1/4 cupsliced salami
  2. 1/4 cupextra virgin olive oil
  3. 1 1/2 lbhalved brussels sprouts
  4. 12 ozred potatoes, quartered
  5. 1diced onion
  6. 1chopped fresh parsley leaves
  7. 1 1/4 tspsalt is what the recipe calls for, but I use less.

Steps

  1. 1

    Preheat oven to 400°F.

  2. 2

    Cook salami in oil in a small skillet until crispy, about 4 minutes.

  3. 3

    Set salami aside.

  4. 4

    Toss the oil that you cooked the salami in with the brussels sprouts, potatoes, and onions.

  5. 5

    Place on a rimmed baking sheet.

  6. 6

    Season with salt.

  7. 7

    Roast in the oven, stirring the vegetables halfway through the cooking time, until browned, about 30 minutes.

  8. 8

    Stir in the parsley leaves and the salami.

  9. 9

    Serve and enjoy!

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
