Ingredients

  • 4 mediumRed or white waxy potatoes, cleaned and peeled ( if you want them peeled)
  • 1 tbspDiced garlic
  • 1/2 tbspsalt ( I used regular table salt)
  • water
  • 1 tbspExtra virgin olive oil
  • 1 tbspcoarse grain salt
  • 1/2 tspground black pepper
  • 1/3 cupchopped parsley

Steps

  1. 1

    In a medium saucepan, place garlic, 1tbls salt, potatoes, and enough cool water to cover.

  2. 2

    Bring to a boil. Boil potatoes till they are just folk tender. Preheat oven to 450°F

    Remove potatoes from water. do not discard remaining water, but do remove from heat

  4. 4

    Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil. sprinkle with coarse salt and pepper

    Place in hot oven to toast and brown a bit. Approximately 20 to 25 minutes depending on your oven.

  6. 6

    Remove from oven and sprinkle with parsley. Serve

    I saved my water from the potatoes to to steam green beans and sweet peppers
