I'm going to make chicken two different ways in this post. This chicken would be really good on the bbq but as the whether is not great here in the uk you have to come up with different ways of having your favourite foods. Personally I prefer the fried chicken as the grilled chicken loses some of its flavour, I would suggest marinating the chicken over night if you are going to do skewers. Also add a bit extra of the marinade ingredients.

Ingredients

4 servings
  1. Marinade
  2. 6chicken breasts, cut into cubes
  3. 1fresh lemon juice, (approximately, I used about 2 for my own personal preference)
  4. ground black pepper
  5. garlic salt, (optional)
  6. 1 tbspmince garlic
  7. 1 tbspchicken marinade
  8. hot paprika
  9. skewers
  10. 2 mediumonions, cut into 8 pieces each.
  11. 4bamboo skewers, soaked
  12. garlic salt
  13. Frying
  14. 1 tbsplard
  15. 50 mlvegetable oil
  16. 1 tbspbutter
  17. plain flour

Steps

  1. 1

    Prepare the chicken.

    Mix all the marinade ingredients well.

    Pour the marinade over the chicken, I didn't actually measure the ingredients so the above are just rough estimates but you can use your own measurements.

    Mix the chicken with the marinade well.

    Marinade for at least 3-4 hours in advance, preferably overnight. Cover and set in the fridge.

    GRILLNG: When its time to cook, preheat the grill.

  7. 7

    Soak you skewers.

  8. 8

    Prepare your onion, then sprinkle some garlic salt over the onions.

    Add one piece of chicken to the skewer then add a piece of onion. Continue this process until all 4 skewers are completed.

    Transfer to the preheated grill and cook for 15-20 minutes or until cooked through. Turn the skewers once at half way point. Cook for longer if needed. I had to cook mine an extra 10-15 minutes as my grill is not working properly.

    You should be left with about this much meat.

    In a heavy based saucepan add the lard, butter and oil and bring to the heat.

    Place a good amount of flour in a shallow dish.

    Piece by piece coat the chicken in thr flour and add to the pan gently.

    Fry the pieces for about 10-15 minutes or until ready.

    When cooked place on a plate lined with kitchen towels to absorb any extra grease.

    Try to cook the fried chicken last as the longer you leave it cooked the softer the batter will become.
