My son requested fried chicken for dinner since KFC is a huge no-no in this house. It was worth every ounce of fat I consumed and my family loved it!! This was a recipe I found on Pinterest that I've adapted since the original recipe seemed a little bland.

My son requested fried chicken for dinner since KFC is a huge no-no in this house. It was worth every ounce of fat I consumed and my family loved it!! This was a recipe I found on Pinterest that I've adapted since the original recipe seemed a little bland.

Ingredients

  1. 6 cupcanola oil
  2. 8-10 boneless chicken breasts
  3. 8cups of cold water
  4. 3 tbspsalt
  5. 3 cupflour
  6. 2 tbspseasoned salt
  7. 1 1/2 tbsppaprika
  8. 1 tspcayenne pepper(or more if u prefer more kick)
  9. 2eggs
  10. 1 cupmilk
  11. 3 tbsphot sauce

Cooking Instructions

    In a large container with fitted lid, place chicken, water and salt and let it sit in the fridge for 2-3 hrs. Drain and pat all the chicken dry.

    In a very large deep frying pan or dutch oven heat the oil until it reaches 350°F.

    Mix flour, paprika, seasoned salt and cayenne in a large bowl. Beat two eggs with milk and hot sauce in another bowl.

    Dip each chicken breast in milk mixture then seasoned flour. Shake off excess and carefully place in hot oil. Repeat until you can place enough chicken in the pot without overcrowding.

    Fry each chicken breasts for 8-10 minutes on each side. They should be a medium golden brown. Remove to a large cookie sheet that has been lined with brown bags or paper towels. (I keep my oven on 170 and place them on the cookie sheet until they are all done) Enjoy!!

    I served with Mashed potatoes and biscuits and country peppered gravy to make it COMPLETELY FATTENING.
