Ingredients

  1. for omelet
  2. 2egg whites
  3. 3 tbspvegetable oil
  4. bunchof spinach
  5. 1/4 cupshredded mozzarella cheese
  6. Avocado
  7. salsa
  8. salt & pepper
  9. for salsa
  10. 4medium tomatoes
  11. 1chile jalapeño
  12. 1chile wero (yellow )
  13. 1garlic clove
  14. salt & pepper

    Mix egg whites in a bowl. Add salt and pepper to taste. Set aside.

  2. 2

    Chop the spinach (rough chop). Shre cheese, set aside. Cut Avocado in half and cut out slices, set aside.

    Make salsa (optional): add everything in a pot of water, set over high heat until tomato skin begins to tear and chiles are soft (20min). Toss everything in a blender. Add 1/2-1cup water from where you boiled veggies. Add salt and pepper to taste. Blend. You can add more water, salt and pepper to your preference.

    Add oil to a pan on medium heat for 1 minute. Add the egg mixture. Let it spread and slightly cook over oil (about 1 minute). Add spinach, cheese to top of omelet. After another 15 sec. Using a spatula flip half of the omelet over to its other side to close the omelet. Then using a fork or knife poke the omelet a few times (to help cook center well). Cook about 2 min each side.

    Place on plate. Add avocado and salsa. Enjoy.

I learn a lot from them actually lol.I just had a baby girl 3 months ago, and im working on getting my body back lol, Im happily married to a great man, my best friend, 4 years 7 months to the date, and I won his heart over way before he knew I could cook, but it didnt hurt once he found out ;^)
