Delicious healthy breakfast. Super easy amd delicious. You can prepare the salsa ahead of time and also use it for other dishes ( flautas, tacos. Tamales, chilaquiles, etc.)

Mix egg whites in a bowl. Add salt and pepper to taste. Set aside.

Chop the spinach (rough chop). Shre cheese, set aside. Cut Avocado in half and cut out slices, set aside.

Make salsa (optional): add everything in a pot of water, set over high heat until tomato skin begins to tear and chiles are soft (20min). Toss everything in a blender. Add 1/2-1cup water from where you boiled veggies. Add salt and pepper to taste. Blend. You can add more water, salt and pepper to your preference.

Add oil to a pan on medium heat for 1 minute. Add the egg mixture. Let it spread and slightly cook over oil (about 1 minute). Add spinach, cheese to top of omelet. After another 15 sec. Using a spatula flip half of the omelet over to its other side to close the omelet. Then using a fork or knife poke the omelet a few times (to help cook center well). Cook about 2 min each side.

Place on plate. Add avocado and salsa. Enjoy.
