Ingredients

  1. 1 cupAll Purpose Flour / Maida
  2. 1/2 cupMethi Leaves
  3. 1/2 tspAjwain
  4. 1 tsp Black pepper Crushed
  5. to tasteSalt
  6. as neededRefined oil for deep fry
  7. 5 tspRefined oil for moyan

Steps

  1. 1

    Take all the ingredients in a bowl and rub with your fingers to incorporate oil in the flour.

  2. 2

    Add water slowly and knead it to a smooth dough. Cover and let it rest for 15 mins.

  3. 3

    Now divide the dough into small balls and roll it out. Now flatten it out with roller pin. Now use a fork or knife to prick holes in the mathri.

  4. 4

    Heat oil for deep frying, drop mathri in hot oil and fry it in a medium heat oil till golden.

  5. 5

    Remove it. Cool it down and store it in a air tight container.
