Eat this with Nuoc Mam (fish dipping sauce) with vermicelli noodles and fresh greens and herbs for a delicious meal!
Cooking Instructions

Mix 1: combine salt, sugar, five-spice powder and pepper in bowl. Mix 2: combine salt and vinegar in bowl

Rub mix 1 over side of pork ( don't forget side of piece of pork, except skin side). Flip it over and dry skin side with paper towel. Brush mix 2 on skin side and let marinate for 3 hours or overnight

Wash piece clean and dry it. Make shallow incision in pork (meat side) 1 cm deep and 2.5 cm from each other

Preheat overn to 400°F. Place pork skin side down on piece of pork on aluminum foil lined tray and roast for 20min

Remove from oven, flip it over and dry skin side with paper towel. brush mix 2 on skin side again and roast skin side up for another 20min. ( poke holes with fork in skin if you want it extra crispy)

Repeat drying skin side and reapplying mix 2 and roast from another 20 min

Take out of oven immediately and let it cool down for about 15 mins. Don't let it cool down in oven because skin will lose crispiness.

Cut up the pork into small pieces and enjoy!
