Ingredients

  1. 1 packageslong grain and wild rice fast cook mix
  2. 1 smallonion, chopped
  3. 2 stickcelery, chopped
  4. 2 tbspbutter
  5. 1 cancondensed chicken with white and wild rice soup or cream of chicken soup
  6. 1/2 cupsour cream
  7. 1/3 cupdry white wine or chicken broth
  8. 1/2 tspdried basil, crushed
  9. 1 cupchopped fresh mushrooms
  10. 2 cupchopped cooked chicken
  11. 1/3 cupfinely shredded Parmesan cheese

  1. 1

    Prepare rice mix according to package directions.

  2. 2

    Meanwhile, preheat oven to 350°F. In a large skillet, cook onion and celery in hot butter over medium heat until tender.

  3. 3

    Stir in soup, sour cream, wine, and basil. Stir in cooked rice, chicken & mushrooms.

  4. 4

    Transfer mixture to a 2-quart baking dish. Sprinkle with cheese.

  5. 5

    Bake, uncovered, about 35 minutes or until heated through.

  6. 6

    Can also add cooked chopped squash to the mix.
