Cooking Instructions

For sauce, mix all together

Combine the cabbage, leeks, flour, and salt in a bowl. Toss until everything is coated with a dusting of flour. Stir in the eggs and mix until everything is evenly coated.

Heat a large skillet over medium heat and add a generous splash of olive oil. Scoop the cabbage mixture into the pan, and using a metal spatula press it into a round pancake shape, flat as you can get it. Cook for 4-5 minutes, or until the bottom is golden.

To flip the Okonomiyaki, slide it out of the skillet onto a plate. Place another plate on top and flip both (together) over. If you need a bit more oil in your skillet, add it now, before sliding the Okonomiyaki back into the skillet. Again press down a bit with a spatula and cook until golden on this side - another 3 -5 minutes.

When you are finished cooking, sprinkle with toasted almonds and chives. Spread a bit of sauce and decorate with mayonnaise as pictured

I had been asking myself this question: is Japan's Okonomiyaki a pizza? I mean, does a pan-fried batter counted as a dough? It definitely has sauce and toppings. But can Kewpie mayo qualifies as a cheese? Pizza is dough, sauce and cheese right? So technically, this is a pizza, right? Lol! I watched too much "Is it really dough" on YouTube.I love this "Japanese pizza". I hardly find any great okonomiyaki in Singapore tho, sadly. There are actually 2 types of okonomiyaki; the Osaka's and the Hiroshima's version. The one which I am making today is the Osaka's version. Hiroshima's version is a lot "heavier" as it contains added noodles and lots of vegetables and other toppings. Perhaps I will try to make that version in the future. It is really difficult to decide which is my favorite; each version has it's own uniqueness.This is rather a simple and easy dish to make, tho, flipping the okonomiyaki really do takes some practice, especially when I am making 8 inch big okonomiyaki. But it all comes together in the end. Cos after all, mesmerizing over how the bonito flakes dance is the price. Don't you agree? Anyway, I was so glad the other day when I spotted chicken bacon in my local supermarket. Chicken bacon does exist! I do not consume pork, so this is intriguing for me. You can however, use a high quality pork bacon. In closing, is this a pizza? I will leave it to you to decide and I really do hope you give this recipe a try. Daniel Lim -

I learned this from my wife. Adding lots of nagaimo yams is the trick! You can also add sakura shrimp, konnyaku, and chikuwa.The amount of nagaimo yams used is the deciding factor. You could add more if you wish. Add as much cabbage and green onions as you like. The batter doesn't use much flour, so you don't have to worry about it cooking all the way through!
