Ingredients: 2 cucumbers,sliced in half vertically then sliced thin; 1/2 small sweet onion cut in half and sliced thin; 1/4 cup light mayo; 1/4 cup light ranch dressing; 1 tbsp lemon juice; 1 tbsp white vinegar; 1 -2 tbsp fresh dill(the more the merrier for me); 1 tbsp sugar; 1/2 tsp crushed red pepper; 1 sea salt and cracked black pepper to taste

I love cucumber salad but the full fat mayo version has too many calories. So I've created one that uses lighter ingredients but the taste isn't compromised. This is my "go to" side dish for so many meals now made with less guilt!

Ingredients

2cucumbers,sliced in half vertically then sliced thin
1/2small sweet onion cut in half and sliced thin
1/4 cuplight mayo
1/4 cuplight ranch dressing
1 tbsplemon juice
1 tbspwhite vinegar
1-2 tbsp fresh dill(the more the merrier for me)
1 tbspsugar
1/2 tspcrushed red pepper
1sea salt and cracked black pepper to taste

Steps

Put cucumbers and onions in a large bowl. Mix remaining ingredients well with a whisk. Pour over cucumbers and onions and allow to chill for an hour before serving.
