An off-the-cob version of Mexican Street Corn (Elote) that is simple and quick to prepare. Far more convenient than struggling with perfecting it on the cob too, if I do say so myself! ;)

It was the Pixar movie "Coco" of all things that made me want to try my hand at this popular street food from Mexico. Called "Elotes" this is grilled corn on the cob shoved onto a stick and covered with delicious goodies for a salty, tangy snack!Research on traditional Elotes recipes seemed to indicate that the traditional first layer of coating is Mayo but believe it or not, I am not a huge fan of Mayo so in this version, I swapped out half of the Mayo for sour cream and the result was delicious!

Note: To make garlic oil, bring a 1/4 cup extra virgin olive oil to a simmer in a small saucepan. Add three smashed garlic cloves and simmer until cloves turn golden brown. Remove cloves and allow to cool. Oil can be stored in the fridge for up to a week.

I saw a recipe the pioneer women made and this is similar. I’ll add chicken and some low carb ingredients next time!
