Ingredients

  • 1small yellow or white onion chopped
  • 3scallions
  • 1 tbsbrown sugar
  • 4large garlic cloves chopped
  • 2habaneros or scotch bonnet chile stem seeded
  • 2 tbssoy sauce
  • 1/4fresh lime juice
  • 3 tbsolive oil
  • 1 1/2 tbssalt
  • 1 tbsfresh thyme leaves
  • 2 tspground all spice
  • 2 tspblack pepper
  • 3/4 tspground or fresh nutmeg
  • 1/2 tspcinnamon
  • 1 inchfresh ginger
  • 5 lbschicken breast, drumsticks, thighs about
  • About 1/2 cup red stripe beer (optional)

Steps

  1. 1

    Blend all ingredients in blender till smooth

    Marinade chicken over night. It must be marinaded over night to get all the good flavors going.

    Before grilling make sure chicken comes to room temp so they cook evenly.

  4. 4

    Make sure the fire is not too hot and coles are grayish because chicken may burn easly due to spices. Grill about 3 to 4 minutes each side babysitting so it wont burn.

  5. 5

    After getting a good char on the chicken move to indirect heat and cover the grill for about 30 to 40 minutes.
    I DID overcook mines a little but it was still delicious and so much flavors.

    Internal temp for bone in chicken 165

I am gonna try this one day I dearly love scotch bonnet peppers. Others here can't try it so I will have to make a plate separate from them.
