Ingredients

  1. 175 gramsbutter
  2. 175 gramslight muscovado sugar
  3. 3/4 cupgolden syrup
  4. 3/4 cupblack treacle
  5. 350 gramsself raising flour
  6. 3 tspground ginger
  7. 300 mlmilk
  8. 1egg
  9. 50 gramscrystallised ginger optional
  10. orange drizzle
  11. 150 gramsicing sugar
  12. 50 mlorange juice

Steps

  1. 1

    line a 20 cm square tin with baking parchment. preheat oven 160°c

  2. 2

    melt butter, sugar, syurp and treacle in a pan and leave to cool slightly

    sieve flour and ground ginger in a mixing bowl. add wet mix to the dry mix and beat until combined

    add milk and egg and mix. if using crystallised ginger add now

    pour into tin and place in the oven for about 50 mins or a skewer comes out clean

  6. 6

    leave to cool for 5 mins while you sieve the icing sugar and mix with orange juice (pure and smooth) prick the cake all over with skewer making sure not to go too deep

    pour over the cake and spread evenly. leave to cool completely before slicing and serving
