Cooking Instructions

Preheat the oven to 165ºC (325ºF). Lightly grease a 25-cm (10-in) round cake pan and line the base with baking paper.

Sift dry ingredients together; first 4 ingredients, into a mixing bowl gradually mixing well. Add in order - cooking oil, egg yolks, orange juice and orange rind. Beat until smooth.

In a separate bowl, beat egg whites and cream of tartar until they form very stiff peaks. Add 1/4 cup sugar , and continue to beat thoroughly.

Pour egg yolk mixture in a thin stream over egg whites using the cut and fold strokes. Continue folding until completely blended.

Pour into prepared baking pan at 165ºC (325ºF) for 50 minutes, then at 175ºC (350ºF) for 10 minutes or until done. Cool. Frost as desired.
