Trim the okra and wash it well, then let it drain in a colander.

In a pot over medium heat, add 2 tablespoons of ghee (or pieces of fat) and the onion cut into small cubes. Stir until the onion turns yellow, then add the garlic and stir until the onion and garlic are golden brown. Add the tomatoes, black pepper, and salt. Cover the pot and let it simmer until the sauce thickens.

Once the sauce has thickened, add the okra and the chopped red bell pepper. If you like spicy food, add hot peppers to the okra. Pour in the broth, and once it boils, reduce the heat and let it cook until the okra is tender.

You can add pieces of boiled meat or serve it alongside boiled and roasted or oven-grilled chicken, white rice, green salad, or pickled eggplant and bread. Enjoy!
