When putting a Chinese meal together I feel like having a nice variety - a soup, meat dish, veg dish for two people. Sometimes I want more! Tuna in tomato sauce is perfect, it's a quick and simple easy dish to make.

When putting a Chinese meal together I feel like having a nice variety - a soup, meat dish, veg dish for two people. Sometimes I want more! Tuna in tomato sauce is perfect, it's a quick and simple easy dish to make.

Prepare the vegetables. Slice the shallots, cut tomatoes into 1/8s, chop the spring onions and coriander into small pieces and drain the tinned tuna.

In a pan, heat up some olive oil and add the shallots. Let this brown for 30 seconds and add the tuna pieces to the pan.

Add in the tomatoes and green herbs. Season with a tiny sesame oil, salt, pepper, chicken powder and fish sauce (little bit of these will do, taste and add accordingly). I also like to add a little chilli kick so I pop in a bit of birds eye chilli - entirely up to you. Let this cook for 5 mins or so.

Once the tuna and sauce are hot, it's good to go. Serve with fresh herbs on top again and eat with boiled rice or congee! Both would suit the dish nicely. I had mine with rice and a few other side dishes.
