Queso Flameado (not for Chips)

Mozzarella could be substituted for the Mexican cheese. Any easy to melt cheese that "strings" could be used. Also a crusty bread, toasted, works in place of tortillas. My wife likes to put a thin slice of tomato on it when using bread. You can add some crushed red pepper for heat during the sausage/chile cooking phase if you desire. 07-Aug-15 As a side note, I tried this last weekend, but only had some hot Italian sausage (removed from casings), pretty good also.

Ingredients

10 servings
  1. 3 cupMexican melting cheese
  2. 1 cupMonterey Jack
  3. 1large Pablano chile (other like Anaheim, Bell works also), use how much you like, or none
  4. 2each links Mexican chorizo sausage

Steps

    Set oven to 350°F

  2. 2

    Heat an oven proof skillet on medium high heat. I use a spray oil also.

  3. 3

    Remove from casing if that applies to the sausage you have. Put sausage in skillet, break it up as you cook it.

    Chop the chile into thin strips about 2 inches long.

  5. 5

    Add the chile to the sausage when it is about half way done.

    If the cheese is not shredded, cut it into chunks to assist melting.

    Turn off the heat on the skillet when the sausage is done. Drain off excess oil if you desire.

    Add the cheese to the skillet. I sort of layered it.

    Place in oven until bubbly and browned to your liking. About 15 minutes. If for a party, use a casserole dish instead of skillet, it presents better.

  10. 10

    Heat some tortillas while the queso is in the oven to serve the queso in.

    Queso will be extremely hot, dish on tortillas, but let it cool some so you don't burn your mouth.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
