Toddler Meatballs

My 2-1/2 year old great-grandson LOVES meatballs and eats them several times a week. His very busy grandma was keeping him supplied by buying ready-made toddler food meatballs. Knew I could make them much cheaper, and healthier, so I developed this recipe especially for him, vacuum sealed them in serving-size portions (8 per bag) and stocked their freezer. The cost came out to less than 2 cents per meatball!

Ingredients

  • 3 lbground beef, lean
  • 1 cupvegetable & fruit pulp (see NOTE)
  • 3/4 cupoats
  • 3 largeeggs
  • 3 tbspworcestershire sauce
  • 1 tspblack pepper
  • 2 tspgarlic powder
  • 2 tsponion powder

    NOTE: Cleaning my juicer one morning after making myself a glass of carrot-celery-apple juice, I felt guilty putting the leftover pulp mixture down the garbage disposal. It dawned on me that it would be a great addition to the meatballs I wanted to make for my great-grandson, who's not a big fan of vegetables.

    Mix all ingredients together well in a large bowl. Works best to mix with your hand, squishing everything through your fingers so everything gets evenly distributed.

    Form into bite-size meatballs. I use a small cookie dough scoop to keep them a uniform size. Place in roasting pan. I also used a roasting rack so the fat drained away while cooking.

    Bake uncovered in a preheated 375°F oven for 15 minutes if you're going to freeze them for later microwaving, or 20 minutes if you're eating them after baking.

    Package in air-tight containers and freeze. I recommend vacuum seal bags (FoodSaver) in serving-size portions. To heat right out of the freezer, I took a bag of 8 meatballs, cut a 1-inch slit where I was going to open the bag, and microwaved in the vacuum bag for 1 minute 10 seconds.

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 10 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.

I’m thinking the Oats could be swapped out with some sort of Flaked coconut/ground flax mixture for children that can’t have grains, excited to try this when I can get to the store.
