Extremely tasty and not so heavy to kill a mood at brunch. Super easy and cheap.
Steps

Heat a skillet and brown the mushrooms. (Sauteé the spinach real quick if you like).

Add all the chopped mixin's into a large bowl.

Pre-heat the oven to 325; once all the ingredients are prepped and chopped and in a mixing bowl.

Break 10 eggs over ingredients and mix, salt and pepper. (One could scramble the eggs prior to adding, but I like the texture when done this way).

Pour into a 13x9 inch glass pan.

(Bake for 40 mins at 325 when in glass and 350 when in a metal pan).

Serve with fresh fruit :O

(Cheddar cheese option: mix in some shredded cheese and sprinkle a tad on top).
