Preserved Basil in Olive Oil

This produces a delicious basil flavour in the oil which you can use in cooking as well as using the basil. It will last for around a year in the fridge, although I use it way more quickly than that. It also makes a nice Christmas present for family members.

Cooking Instructions

Sterilise your jar/s and lid/s by boiling them in water for 10 minutes

Sprinkle salt into the bottom of a glass jar
- 3
Add a layer of basil leaves
- 4
Cover with a layer of olive oil
- 5
Sprinkle a litlle salt, add a layer of basil, cover with olive oil and repeat this process until the jar is full, pressing leaves down and ensuring they are fully immersed in oil
