Puff shells
Perfect for an after school snack or busy morning breakfast!
Steps

Heat oven to 400*C

Bring water to a boil in a thick bottom pot

Add butter

When the butter is melted, lower the stove top heat to low and add flour a little at a time until a ball forms in the pot. The ball should follow the spoon as you turn it.

Remove the dough from the stove and leave to cool down until it is cool or slightly warm. N.B. The dough must cool down before adding the eggs.

When the dough is cooled, using an electric mixer, add eggs one at a time, beating after each addition. Continue this process until all the eggs are added and a smooth paste is formed.

Place the mixture into an icing bag fitted with a star tip and form the puff shells similar to that of icing cupcakes. Be sure to oil the dish you wish to use properly and ensure that you form a full base for the shell then you follow the method of icing cupcakes.

Bake for 20 - 25 minutes until it is golden brown and small ears of water can be seen on the shells.

Serve with tuna or chicken paste!
