Ingredients

6 servings
  1. 1unbaked 9 inch in shell (store bought or make your own)
  2. 2 tbspbutter
  3. 10 ozfrozen spinach or 1 pound of fresh
  4. 4 largegreen onions, chopped
  5. 3 largeeggs
  6. 3/4 cupmilk
  7. 1/2 tspbasil
  8. 1/2 tspcelery salt
  9. 1 tbspbread crumbs
  10. 1 tbspor more grated Parmesan cheese
  11. 4to 6 cherry tomatoes, circle cut and patted dry
  12. 1 1/2 cupshredded Swiss cheese (pepper jack cheese can also be used if you prefer a spicier quiche)
  13. 1garlic clove, minced

Steps

  1. 1

    Preheat oven to 425°F.

  2. 2

    Cook the spinach and drain well.

  3. 3

    Melt the butter in a skillet over medium heat.

  4. 4

    Add the onion and garlic and cook for 2 minutes.

  5. 5

    Add the spinach.

  6. 6

    Cook and stir until any excess moisture is gone.

  7. 7

    Place in a large bowl.

  8. 8

    Add the cheese, eggs, milk, basil, and celery salt.

  9. 9

    Mix well.

  10. 10

    Spoon into prepared pie shell.

  11. 11

    Arrange the cherry tomatoes around the edges of the filling.

    Bake for 15 minutes.

  13. 13

    Decrease the oven temperature to 350°F and bake for 10 minutes.

    Mix bread crumbs with Parmesan cheese and sprinkle over the top of the quiche.

  15. 15

    Bake for a final 10 minutes.

  16. 16

    Let cool for a bit before slicing.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
