Ingredients

  1. 4Flour Tortillas
  2. 2 cupMexican blend shredded cheese
  3. 2Large cans whole pinto beans
  4. 1large can red or green enchilada sauce (I prefer green)
  5. 1/4 cupCream cheese
  6. 2 tbspvegetable oil (approx)
  7. Salt & Pepper

Cooking Instructions

    Put oil in a large frying pan and heat on med/high

  2. 2

    Open cans of beans and drain mose of the liquid. When oil is hot add your beans

  3. 3

    Take either a potato masher or a fork and start smashen! (Add water if they start getting dry.) When they are almost to a smooth consistency add salt/pepper and cream cheese. Then continue to mix till creamy and smooth.

    Open you can of enchilada sauce and warm up in a medium pot.

    Warm tortillas till they are flexible without breaking

    Add preferred amount of beans and 1/4 cup of cheese to each tortilla and roll um up. Then add enchilada sauce on top then top it off with a 1/4 of cheese and ENJOY!
