Cooking Instructions

Put oil in a large frying pan and heat on med/high

Open cans of beans and drain mose of the liquid. When oil is hot add your beans

Take either a potato masher or a fork and start smashen! (Add water if they start getting dry.) When they are almost to a smooth consistency add salt/pepper and cream cheese. Then continue to mix till creamy and smooth.

Open you can of enchilada sauce and warm up in a medium pot.

Warm tortillas till they are flexible without breaking

Add preferred amount of beans and 1/4 cup of cheese to each tortilla and roll um up. Then add enchilada sauce on top then top it off with a 1/4 of cheese and ENJOY!

I wanted to think up delicious ways of putting those beans to good use.Use canned kidney beans or kidney beans cooked in sugar, whichever you prefer. You might be surprised at the idea of using beans cooked in sugar in a salad, but the other day I saw a TV program that showed that sweet beans are used in things like okonomiyaki and fried yakisoba noodles in a certain region, and I thought that it sounded plausible and tried it out.
