Ingredients

  • Chicken
  • 2Boneless, skinless chicken breasts
  • 3 tbspLemon juice
  • 3 tbspOlive oil
  • 1 tbspMinced garlic
  • 1 tspSalt
  • 1/4 tspBlack pepper
  • 1/2 tspBasil or oregano
  • Pasta
  • 2 cupPenne pasta
  • 2 tbspButter
  • 6 tbspLemon juice
  • 1 tbspMinced garlic
  • 1/2 cupHalf & half or heavy cream
  • 2 tspBasil
  • 2 tbspCapers
  • 1/2 cupParmesan cheese
  • Reserve ingredients
  • 1Parmesan cheese
  • 1/2 cupReserve pasta water

Steps

  1. 1

    Combine all chicken ingredients and marinade chicken overnight.

  2. 2

    When ready grill chicken until done, slice into strips.

  3. 3

    While chicken is grilling boil pasta. Retain 1/2 cup of pasta water.

  4. 4

    In a sauce pan melt butter and which garlic and lemon juice.

  5. 5

    Add half & half (heavy cream) and whisk until hot.

  6. 6

    Add salt & pepper to taste, parmesan cheese, basil, capers until cheese is melted.

  7. 7

    Use pasta water to loosen sauce if necessary.

  8. 8

    Toss pasta in sauce, add sliced chicken on top.

  9. 9

    Sprinkle with extra Parmesan cheese if desired.
