In a mixer jar add cashew nuts and grind until a smooth powder, do not grind too much otherwise it will start to ooze oil

Add sugar and water in a pan and cook it over medium flame

Stir continuously and cook until sugar dissolves completely

Cook until syrup turns thick and little sticky

Do not wait until the syrup reaches to the one string consistency

Reduce heat to low and add cashew nut powder and cocoa powder

Stir with spatula and mix properly

Cook and mix continuously until mixture thickens and leaves tha sides of pan

Do not over cook

Turn off the flame and let it cool for 3-4 minutes

Grease a plastic sheer and transfer the mixture over sheet

Grease your palm with ghee and knead it for few minutes

Roll it out into a desired thick round shape using a rolling pin

You can also place a sheet over it to prevent dough sticking to rolling pin

Cut it using knief into diamond shape pieces

Let it cool for 3-4 minutes

Now melt dark chocolate in a double boiler or in the microwave

Cut the transfer sheet to kaju katli size

Apply melted chocolate on kaju katli and place transfer sheet over it

Peel the sheet after 15-20 minutes

Your kaju katli is ready to serve
