Sig's Spicy Veggie Cheesy Spread

I wanted to create a vegetarian spread that I could also use as a dip or a sauce to accompany a meal. This serves that purpose. If you want it thicker you can thicken it further either by adding more butter and chilling it or adding a little cornflour, or even make a soup out of it. I combined it here with my blue cheese spread they go wonderfully well together.

Add the lentils and chickpeas into a pot. Peel the garlic and cut into rough chunks. Add the water and bring to gentle boil

When just boiling take of heat and add the other ingredients , except the tomato juice ( passata) the oil, lemon juice and honey

Bring to a gentle boil and then whisk with a blender until all is smooth

Then add the rest of the ingredients and puree again, gently boil away most of the liquid , making sure not to burn the bottom of the pan.

Take of heat and season to your liking if needed .Melt the garlic butter and stir into the paste

Either use as a dip or as a spread on a rustic bread .

For spread it needs to cool completely and can be kept for up to 4 days in fridge . Hope you enjoy.
