Grilled Kofta on Charcoal 🍖🍖🍖

Soak the rolls in the milk.

Sprinkle salt and pepper over the grated onion and set aside to let it release its juices.

Once the bread is soft, blend it in a food processor until creamy, then squeeze out any excess liquid.

Squeeze the onion very well to remove its juice, then add it to the ground beef. Add the bread, garlic, seasoning, and yogurt, and mix everything together thoroughly.

Cover and refrigerate for 30 minutes.

Save the onion juice—don’t throw it away! Add 1 teaspoon of oil to the onion juice.

Shape the kofta onto skewers, wetting your hands with the onion juice and oil mixture to help shape the meat and keep it from falling apart.

Arrange the kofta over hot charcoal and grill, turning until fully cooked.
