Ingredients

  • 12medium sized colcocasia leaves (arbitrary ke patte)
  • 2 tbspoil
  • 1 tspmustard seeds
  • 2 tspSesame seeds (til)
  • 1 pinchhing
  • For Besan mixture
  • 2 1/2 cupsbesan
  • 1 tspginger green chillies paste
  • 1/2 tspturmeric powder
  • 1 tspchilli powder
  • 1/2 tsphing
  • 3/4 cupjaggery (gur)
  • 3 tbsptamarind water
  • to tasteSalt
  • For garnishing
  • 2 tbspfreshly grated coconut
  • 2 tbspfinely chopped Coriander

Steps

  1. 1

    In a bowl mix Besan mixture and make a semi thick paste for applying on the colcocasia leaves.

  2. 2

    Now clean the leaves and place the leaves on the platform.

  3. 3

    Arrange the leaves size wise.First keep the bigger leaf and apply the Besan paste on it, then place a leaf smaller than the first one and apply the paste and then arrange the leaf little smaller than the first 2 leaves.

    Now tightly roll the leaves into a big roll.

  5. 5

    Repeat the procedure for the remaining leaves.

  6. 6

    Now keep all the rolled leaves in a cooker dabba and place the dabba in cooker with little water Close the cooker lid..

  7. 7

    Steam the colcocasia leaves roll for 15 minutes.

  8. 8

    Off the flame.

  9. 9

    Cool the rolls and cut them into 2 inches rolls.

  10. 10

    In a pan heat oil.Add mustard seeds and Sesame seeds and hing.When mustard seeds start to crackle add the arbitrary rolls and stir it gently.

    Keep on flame for 2 minutes and off the flame.

  12. 12

    Garnish with chopped Coriander leaves and grated Coconut.

  13. 13

    Your Patras are ready to serve with tea or on lunch time.
