Ingredients

2 servings
  1. 2(8oz) Skinless, Boneless Chicken Breasts
  2. 2 ozChopped Spinach
  3. 1/3 cup(about 6) Diced Sun-Dried Tomatoes
  4. 1/3 cupCrumbled Feta Cheese
  5. 1/4 tspBlack Pepper (Divided)
  6. 1/2 tspSalt (Divided)
  7. 2 cloveMinced Garlic

Steps

  1. 1

    (Optional) Marinate chicken breasts 1-24 hours. Keep the marinade.

  2. 2

    Preheat oven to 400°

  3. 3

    Heat a large skillet over medium-high heat and coat with cooking spray.

  4. 4

    Sauté garlic for 1 minute.

  5. 5

    Add 1/4 tsp salt, 1/8 tsp pepper, tomatoes, and spinach. Sauté until moisture evaporates.

  6. 6

    Remove from heat and stir in feta cheese.

  7. 7

    Cut a horizontal slit through thickest portion of both chicken breasts creating a pocket. (Do NOT cut all the way through)

  8. 8

    Stuff 1/2 of the mixture into each pocket.

  9. 9

    Brush marinade over each side of the chicken breasts.

  10. 10

    Sprinkle remaining 1/4 tsp salt and 1/8 tsp pepper over chicken.

  11. 11

    Bake about 25 minutes.

Amazing! Used roasted red peppers instead of tomatoes and used garlic and herb feta cheese. Delish!
