I saw this on an m&s advertisement. With stilton cheese wrapped in parma ham. It was gorgeous, now I use all different stuffings.

Lay all the mushrooms out, and just pull out the middle stem, lay them spaced for whatever filling you prefer

For 3 of them I put in the onions first, then grated cheese to fill the hole and wrap in foil.

The others, I made with parma ham and soft Philli: Lay ham down flat, put the mushroom on it, fill with Phili, then pull sides of ham around the mushroom. Place the other slice across the top, then wrap in foil.

You can also make it with diced cucumber, philli and parma ham wrapped around.

Or sliced cheese and cucumber. No ham. Anything really. Garlic mixed in soft cheese is gorgeous.

Cook for 20-30 mins on gas 5 or 150°C. For the last, 5 mins take off the foil and bake. It makes them a little crisper. Great as a side dish, or a buffet.
