Ingredients: 2 or 3 cups chopped kale; 1/2 cup cranraisins; 1/4 cup pine nuts; 3 tbsp diced red onion; 3 tbsp fresh cilantro leaves; 2 green onions, chopped; 1/2 tsp whole flax seed; 3 tbsp crumbled goat cheese; 2 tbsp olive oil; 2 tbsp apple cider vinegar; 1 1/2 tbsp lemon juice; 1 tsp lemon zest; 1 tsp honey or agave nectar; 1/2 tsp black pepper; 1 tsp fresh dill

Ingredients

2or 3 cups chopped kale
1/2 cupcranraisins
1/4 cuppine nuts
3 tbspdiced red onion
3 tbspfresh cilantro leaves

1/2 tspwhole flax seed
3 tbspcrumbled goat cheese
Vinaigrette
2 tbspolive oil
2 tbspapple cider vinegar
1 1/2 tbsplemon juice
1 tsplemon zest
1 tsphoney or agave nectar
1/2 tspblack pepper
1 tspfresh dill

Steps

Mix all ingredients for vinagrette. Massage into the kale well for a minute or two. Let set for about 5 minutes while dicing other ingredients.

Add remaining salad ingredients and toss well. Store whatever is not eaten in an airtight container in the refrigerator.
