Add eggplant, onions, mushrooms, red peppers, zucchini, and garlic. Saute until golden and soft, stirring periodically, about 15 minutes.

Add tomatoes, rosemary, salt, and pepper. Cover and simmer over medium low until soft, about 20 minutes.
