Ingredients

  1. 1/4 cupolive oil
  2. 1eggplant, peeled and cut into 1" cubes
  3. 2onions, cut into half moons
  4. 12 ozmushrooms, sliced
  5. 2red peppers, sliced
  6. 2zucchini, cut in half lengthwise and sliced
  7. 6 clovegarlic, crushed
  8. 1 can28 ounces - stewed tomatoes
  9. 2 tspdried rosemary
  10. 1/2 tspsalt
  11. 1/2 tsppepper

Steps

  1. 1

    Heat olive oil in large pan over medium high.

  2. 2

    Add eggplant, onions, mushrooms, red peppers, zucchini, and garlic. Saute until golden and soft, stirring periodically, about 15 minutes.

  3. 3

    Add tomatoes, rosemary, salt, and pepper. Cover and simmer over medium low until soft, about 20 minutes.

I made this tonight and oh my goodness wonderful!! I added a little extra salt and pepper but thats just my taste and a lttle crushed tomato to thicken as it simmered. Oh how pretty and delish. Thanks
