Bonito flakes are dried, fermented, and smoked skipjack tuna.
Its the base for many traditional Japanese soups and broths. The flakes plump up when you cook them it has a rich delicate smokey flavor. If you never had it go to an Asian market and buy a small amout to try out.

Put broth in a pot, bring to a boil.

Add butter, bonito flakes, shallots, garlic, and pepper. Let boil

Beat one egg, stir the broth add the egg. When the broth is no longer spinning, but boiling add the two eggs, to poach them. It will be fast. Take eggs out one at a time gently and add gently to a bowl. Dip your soup not directly over egg as not to break the yoke.

Top with cilantro serve immediately, for the yoke will finish cooking. You want the yoke runny. I hope you enjoy!
