Ingredients

6 servings
  • 2 lbboneless skinless chicken breast
  • 1 smallonion chopped
  • 1/2 eachred and yellow peppers chopped
  • 1 eachcumin, minced garlic, s&p, chili pepper to taste
  • 1 canmango, apricot, pineapple or whatever salsa you desire
  • 2 tbspevoo
  • 1 packagesAmerican shredded cheese blend
  • 1romaine lettuce
  • 1 packagessour cream
  • 1tomato chopped
  • 1 canno salt added sweet corn

Steps

20 mins
  1. 1

    trim fat from chicken breast and chop into an inch bite size peices

  2. 2

    chop all veggies

  3. 3

    heat oil over medium heat

  4. 4

    add all veggies and chicken and cook until no longer pink

  5. 5

    add all spices and about a half cup of salsa

  6. 6

    serve over romaine and top with remaining ingredients- I like to add a little more salsa too
