This dessert is really popular and usually has long lines, but you can easily make it at home! Add any beans or grains you like, and it's much more affordable too.

Start by making the purple sweet potato QQ balls. Measure out the tapioca starch.

Steam the purple sweet potato, then mash it thoroughly with a fork.

Add the tapioca starch to the mashed sweet potato.

Knead until well combined. If the dough is too dry, add a little water to make it smooth.

Roll the dough into ropes.

Cut into bite-sized pieces and set aside.

For the pumpkin QQ balls, steam the pumpkin. The texture will be wetter than the sweet potato, so you'll need to add more tapioca starch.

Add the tapioca starch and knead until combined. If the dough is still too wet, add more starch as needed.

Cut into pieces, then toss with a little extra tapioca starch to prevent sticking. (Tip: If you want to store them for later, coat with starch and freeze. Boil straight from the freezer when ready to use.)

Bring a pot of water to a boil. Add the QQ balls and cook until they float to the surface.

Next, cook the purple sweet potato QQ balls (do these after the pumpkin ones, as the water will turn purple).

Once cooked, transfer the QQ balls to a bowl of ice water for a few moments to make them chewy. Then toss 2 tablespoons of sugar with the purple sweet potato QQ balls and another 2 tablespoons with the pumpkin QQ balls to add sweetness. Set aside.

Prepare the beans and grains: Soak the red beans, split soybeans, and Job's tears overnight if possible to reduce cooking time. Cook until tender. You can simmer them with sugar for extra sweetness, but plain is fine too.

Make the longan syrup: Add the dried longan to boiling water, then add the dried red dates and both sugars. Adjust sweetness to taste. You can also use monk fruit syrup, Chinese herbal syrup, or simple syrup if you prefer.

For the mashed sweet potato: Mash the steamed purple sweet potato with a fork, add vegan sweetened condensed milk or simple syrup, and mix until smooth. Adjust sweetness to taste. Set aside.

To assemble: Place shaved ice at the bottom of a bowl, arrange the toppings nicely, then add a scoop of mashed purple sweet potato in the center. Drizzle with longan syrup. Enjoy your vegan and healthy dessert!
