** if you have cooked something drain out all but approximately 1/2 of a cup of oil. do not clean bits in the bottom of skillet..

Add onion and garlic in skillet to saute. when onion is partially cooked... 2-3 minutes. add flour. fire should be on Med/ high.

Cook flour until it turns brown. YOU MAY BE SCARED IT BURNING BUT IT IS NOT!!!

When it is the color of Carmel candy add broth. IT WILL BUBBLE AND STEAM SO STEP BACK AS YOU ADD BROTH.

Let it return to bubbling and turn it down on Med/ low.

** after 10 - 15 minutes gravy should be done. adjust salt and pepper to taste.

** if gravy is to thick add a little broth or water.

** if it is to thin... take a coffee cup and fill it half full if COLD water add 1 tablespoon of flour and mix well with a fork. pour only half of the water flour mixture in. again let it boil and turn in back down. this should thicken it.
