Grease 2 Chocolate moulds with 15 sockets each.

Powder cashews very fine. Boil sugar and water till a thick consistency is reached. Add saffron strands, elaichi powder, rose essence followed by cashew powder.

Keep cooking for 10 minutes stirring continuously till a soft ball is formed.

Immediately fill chocolate moulds with a spoonful of cashew mixture and press it so that it takes the shape of the mould.

Cool it for 20 minutes

Demould Kaju katli chocolates and serve right away or cover them with wrappers tightly and store in an air tight container for a week or keep it in the fridge for longer shelf life
