Ingredients

  • 2 canMixed beans (kidney, black, pinto)
  • 1Tomato diced
  • 1 canSweet corn
  • 1 canVegetable broth
  • 4 cloveGarlic chopped
  • 1Celery stalk diced
  • 2 mediumcarrots diced
  • 1/4 cupSweet onion diced
  • 3Green onions diced
  • 1Handful cilantro chopped
  • 1Sour cream
  • 1Blue corn chips broken into small pieces
  • 4 tbspMrs. Dash fiesta lime seasoning

Steps

  1. 1

    Mix together all ingredients except sour cream and chips in large pot.

  2. 2

    Bring to a boil. Reduce heat and simmer for 20-30 minutes.

  3. 3

    Place soup in bowl and add a spoonful of sour cream (or to taste).

  4. 4

    Garnish with chips and fresh cilantro.
