Cajun Country Goat Milk Gravy

When tootie was knee high to a grasshopper, she was allergic to cow milk. Her doctor told us that goat milk would be a good alternative, so we went out and bought us some Nubian milking goats. Four of them to be exact. Grace, Perfect Pearl, Nay-Nay, & Catalina. Nay-Nay and Catalina stayed in milk for almost a year and we were milking them twice a day. We had goat milk backing up faster than we could use it. We made goat milk soap, goat milk pralines, gave it to parents of children who had the same kind of allergy. I basically created this recipe out of a need to use up our surplus. Our daughter eventually grew out of her cow milk allergy and we eventually sold the goats. They were a blast to take care of. I miss them. :-(

In a medium non-stick skillet over medium heat, make a blonde roux by melting the butter in the skillet and then mixing in the flour. Stir the paste around until it is turns light tan in color. This process should take about 4 to 5 minutes.

Add the ham and mushrooms. Stir and toss for about 3 minutes, allowing the roux to coat them.

Add the chicken stock. Stir until the stock and the roux form a thin paste.

Add the black pepper, salt, Worcestershire sauce, and continue stirring for another 3 minutes.

Add in the goat milk, Rotel tomatoes & chilies and stir 5 more minutes. You can adjust the gravy consistency by adding a little more chicken stock if necessary.

Serve over your favorite biscuits.
