Easy Sweet Potatoes Stewed in Orange Juice

My father-in-law grows a lot of sweet potatoes.

I generally stew them with the lemons that my father-in-law also grows, but I came up with this recipe after stewing them with some marmalade I had received. These are great as side dishes or little items to pack in lunches.

I also recommend trying them as imo amanatto (candied sweet potatoes).

Be careful not to overcook the sweet potatoes. You can also substitute marmalade for the orange juice.

These also be transformed into imo amanatto, (candied sweet potatoes) by drying them and coating them in granulated sugar.

Adjust the sweetness to taste. Recipe by Momora.

Ingredients

4 servings
  1. 200 mlOrange juice
  2. 4 tbspSugar
  3. 3 tbspHoney
  4. 1 tspLemon juice (optional)
  5. 1Gardenia seed (optional)
  6. 2Sweet potatoes (choose thin, narrow ones)

Steps

    Rinse the sweet potatoes well, slice into rounds, then soak in water. If you skip this step, the color will not turn bright.

  2. 2

    Add all of the ingredients to a sauce pan, bring to a boil on high heat, then simmer for about 10 minutes on low heat. Cover with a drop lid to prevent the potato slices from breaking apart while simmering.

  3. 3

    When a skewer goes all the way through the sweet potatoes, remove the gardenia seed, and then it's ready to serve. They are delicious served either hot or cold. When serving cold, let them cool in the stewed liquid.

    Enjoy them either hot or cold.
