I originally found this recipe on Pinterest as "Garlic Mushroom Quinoa". I changed it up a bit to suit my low fat lifestyle and it's still delicious!

Cook quinoa in 2 cups of water with chicken stock granules, following package directions.

Heat olive oil or cooking spray in skillet or wok over medium high heat. Add minced garlic and cook a few minutes.

Add mushrooms and stir to coat in oil. Add dry sherry and cover pan immediately, for 2 minutes.

Add thyme, salt & pepper, to taste, and cook about 2 more minutes, stirring seasongs in.

Add cooked quinoa to mushrooms and stir until well combined.

Can top with parmesan or add protein of choice to make it a meal! I usually add cooked shrimp and garnish with parsley. Can also add any cooked veggies you might like. Enjoy!
