Boild the pack of quinoa for 5 minutes then remove and place to the side

Fry the red onions and cougette

Add I quinoa, chopped tomatos, chick peas, kidney beans, fajita mix.. leave to simmer for 20mins

Chop the avocado and the tomatos, mix together leaving it a chunky texture. Add a pinch of salt, a squirt of lemon. Pop this on top of your casserole when you serve.
