1large Onion diced
1 poundminced pork
3 poundsground beef
1 cupdiced green bell pepper
1/4 cupchopped parsley flakes
2 tablespoonschopped cilantro
2 tablespoonsground cumin
1-1/2 teaspoonkosher salt

29 ouncestomato puree
1-1/2 tablespoonslight brown sugar
1 tablespoonmolasses
2 tablespoonstomato paste
2 tablespoonsbutter
1 teaspoonred wine vinegar
1 teaspooncayenne pepper optional

Brown the meat. Drain the juices.

Add onions and peppers.

Add spices and herbs. Stir simmering for 10 minutes.

Add the rest of the ingredients.

Simmer on low heat for 1 to 1-1/2 hours. Taste and adjust the seasonings.
