1 lbkalbasa, sliced
6 largerusset potatoes, diced
3 largecarrots, peeled and sliced
1 largeonion, chopped
2 clovegarlic, minced
1 tbspsun dried tomatoes, diced
2 tbspolive oil
2 tbspJamaican Jerk season
1 tspthyme
salt and pepper

Preheat oven to 400

Mix all the ingredients in a large bowl.

Spread mixed ingredients onto a glass casserole dish and cover with aluminum foil.

Bake for 1/2 hour.

Remove aluminum and stir. Place back into oven for 1/2 hour stirring after 15 minutes.

Remove and enjoy!
