I moved to Texas 20 years ago from California and remember my mom making posole for my dad. I decided to give it a try and it was amazing! I haven't seen it too much in TX but maybe I'm just not lookin in the right places. Great thing is you can make this with chicken too.

Cut pork shoulder into fourths and add to a 6 or 8-quart soup pot. Grate the garlic over the meat. Season with salt. Heat the pot over medium-high heat and brown the meat on all sides. Using some kitchen tongs, keep turning the meat and pushing it down to speed up the process. This should take about 3 - 4 minutes.
