The variations on this are many. I will make with tomato and leave out the grape, use white wine vinegar instead of the lemon juice. Drop the cumin, paprika, and hot sauce. Style to your taste and what you are serving it with. A nice summer salad or a cool side dish to that favorite spicy entree.

  • 3 mediumyellow summer squash
  • 1red bell pepper
  • 10seedless grapes
  • 1/2 cuppine nuts
  • 1/4 tspground cumin
  • 1/4 tsppaprika
  • 1/4 tspgarlic pepper spice blend
  • 3 tbspolive oil, extra virgin
  • 1 tbsplemon juice
  • 1 dashcayenne based hot sauce

    Dice red pepper and squash

    Halve grapes

  3. 3

    Toss all ingredients in a bowl

    Salt to taste

    Best if left in refrigerator overnight, but can be served in an hour.
