Mix mashed potatoes, sour cream, onion and 1/4 cup of the bacon crumbles.

Shape mashed potatoes into 1 inch balls.

Place a cheese curd into the potato ball and mash potatoes around it until the curd is completely covered.

Dip them into eggs, then roll around in the remainder of the bacon bits.

Place onto a cookie sheet or baking dish.

Bake at 350° for 15 to 20 minutes or until the cheese is oozing out.
